Light, fluffy and crunchy... It's the perfect summer spinach salad treat:
About 16 ounces of baby spinach
1 carrot, shaved with peeler
1/2 of a cucumber
1 avocado
1 granny smith apple
1 1/2 cups of chopped walnuts
A generous squeeze of lemon
Balsalmic vinagrette dressing
Delicious!!
